Sodium Citrate is the sodium salt of citric acid. It is used as a buffering agent used to maintain the
desired pH, of a water based product, in the presence of small amounts of acid or base
(alkaline) ingredients.

It may also be used as a pH adjuster and the amount to add will depend on the starting pH
and the desired final pH.

The standard usage rate is 0.25 to 1.0%.
It may be added to the water phase.

To determine the amount needed you will add it, in small increments, to your finished product
and take good notes as you increase it, until you get the desired pH.
